These coconut biscuits are often in our tin – we love ’em! The perfect accompaniment to my end of day cuppa, curled up with a book. Bliss!
From Anna and Roger Wilde’s “Real Fresh Food” cookbook.
Ingredients
1c ground almonds OR grind 1/2c nuts + 1/2c sunflower seeds
1 egg
1 tsp vanilla
60g melted butter or coconut oil
1/3c raw sugar
½ tsp baking soda
Pinch sea salt
1 cup coconut
2 T arrowroot or cornflour
- Warm the oven to 180°C.
- Grind up the nuts and seeds if using.
- Whisk the egg, vanilla, butter, sugar, baking soda and salt together.
- Add the ground nuts, coconut and arrowroot.
- Roll tablespoons of the mixture into balls, flatten with a fork or your fingers and leave room to spread.
- Bake for 10 – 15 mins till brown.
