It was 2012 when I shared this delightful recipe – 4 years ago Sal! I understand the hunting and messaging – these simple little patties are just the best!
So here they are, just for you. And on the website ever more.
Quinoa Beetroot Patties
100g quinoa for 300g cooked. Brown rice, couscous or bulghur wheat are perfect replacements.
175ml water to cook the quinoa in
150g beetroot (any vege will do, although purple patties are pretty fab)
100g red onion
1 or 2 cloves garlic, crushed
100g flour
2 tsp curry powder
1 tsp salt
2 eggs
Oil for frying
Rinse the quinoa under cold water. Boil in 175ml water for 10 minutes under a lid. Remove the pan from the heat and leave for at least 10 minutes, with the lid on.
Grate the onion and beetroot.
Mix garlic, flour, curry, salt, vegetables, cooled quinoa and eggs together.
Turn heaped tablespoons of the mixture into 1.5cm high patties.
Heat oil in a fry pan over a medium heat.
Fry gently for about 5minutes, turning every now and then until firm, brown and crisp on the outside. The middle should still be soft.
PS Crumbled feta makes a yummy addition (or any cheese for that matter), and bigger sized patties make excellent burgers. We love them with guacamole!
