This is one of those dishes that once you discover, you use over and over. Quick, delicious and perfect for food gardeners at this time of year. Serve it with new potatoes + a boiled egg, with vegie fritters, with sausages – sweet stewed tomatoes go with everything!
1kg really ripe tomatoes
olive oil
A couple of garlic cloves, chopped
Sprinkling of dried oregano or a stem of fresh
A few sprigs of basil
Green beans – topped and tailed (as many as you want to use).
Use a wide saucepan.
- Roughly cut up the tomatoes
- Heat a glug of oil and quickly/ gently saute the garlic – dont let it brown
- Add the tomatoes and bring to a gentle simmer
- Sprinkle with dried oregano and salt and pepper
- Put the lid on and simmer for a good 10 minutes
- Add beans
- Simmer for another 10minutes until the beans are cooked how you like. Add a splash of water whenever you feel you need it
- Quickly shred the basil and stir it through
- Check for salt
- Drizzle with olive oil and get into it
